Last night I posted a photo of our meal-in-process on Instagram & received a few inquiries for the recipe. These are Chili Chicken Kabobs: Brooks' favorite. I know I can make his day by having these ready when he gets home from work!
Chili Chicken Kabobs
You will need:
3 Tablespoons olive oil
1 1/2 Tbsp balsamic vinegar
Juice of one fresh lime (I cheat and use the plastic lime full of juice)
1 tsp chili powder

1/2 tsp paprika
2 garlic cloves, minced (I substitute with garlic powder if I don't have any fresh garlic in the fridge)
1 tsp cayenne pepper
Sea salt, to taste
Fresh ground pepper, to taste
1 large onion, sliced into pieces
1 lb boneless skinless chicken breast cut into 1 1/2 inch pieces

To prepare:
1. In a small bowl whisk the first 8 ingredients together.
2. Place the chicken in a shallow baking dish and pour the marinade over it to coat.
3. Let this marinate while you prepare the grill or pan.
4. Thread the chicken and onions (I also use bell pepper, sweet potato, or whatever else I feel like experimenting with) onto the skewers. Discard marinade.
5. Cook in grill pan or on the grill until the chicken juices run clear.

Most of the time I serve homemade guacamole + chips, rice, and a fruit salad with this meal, but when we're trying to eat clean we just omit the chips. It's one of my go-to's, which I have learned every cook should have! Hope you enjoy it as much as we do!
This is wonderful and thank you! I wonder how many calories are in this recipe? I'm been keeping tab on my food portions and counting calories ever since I've finished the 3 Day Military diet. Those low carb meals made the difference and it made me lose weight! Today, i hunt for more low carb meals, do my regular fitness routine with my best friend who is also my fitness buddy and just enjoy food in general. Having a healthy perspective on food is crucial in losing weight. I can eat anything but it has to be good for my body!
